Spicy Blue Cheese Mini Sweet Peppers might be one of the easiest and tastiest low-carb or keto appetizers you can make. They use just three ingredients, take only minutes to prepare, and disappear even faster. Stuff mini sweet peppers with blue cheese, broil them until the cheese melts, and top with your favorite hot sauce. Don’t they look elegant enough for entertaining?

This recipe was inspired by my Spicy Blue Cheese Potato Chips. All the same ingredients except I swapped the potato chips for mini peppers so if you are eating a low carb/keto diet, you can enjoy them too.

I love the bags of mini sweet peppers that are available right now. I snack on them raw, I roast them and blend with fresh basil to make a sauce, slice and add to Summer Greek Pasta Salad and currently, these tasty bites are my new favorite way to eat them.

Cutting a mini pepper lengthwise

Instead of cutting the peppers in half, I like to slice of a little of pepper lengthwise to make more of a ‘cup’ which keeps the cheese in place.

Find which side of the pepper will make it lay flat. Cut away the opposite side, just in front of the stem (see picture above) and remove the seeds. Keep the part you cut away for salads or snacking. Fill with blue cheese and broil (or put under the grill if you’re in the U.K) until melted.

Best cheese

You don’t have to use blue cheese if you don’t like it. Goat cheese, mozzarella, jalapeño jack, cheddar, pretty much any cheese will work.

Perfect for last minutes guests popping in because they can be made so quickly and easy to make in larger batches. You can even prepare them the day before, cover and refrigerate then broil when you need them.

Spicy Blue Cheese Mini Sweet Peppers

Sweet mini peppers are filled with blue cheese, broiled until melted and topped with your favorite hot sauce.

Ingredients
 

  • 12 mini Sweet peppers
  • ¾ cup (141 grams) crumbled blue cheese
  • Your favorite hot sauce

Instructions
 

  • Preheat broiler (or oven grill) and place oven rack at the highest setting.
  • Test each pepper to see on which they will lie down level so when they are filled, they wont roll. Slice lengthwise a piece of pepper from the opposite side (refer to the pictures). Remove the seeds.
  • Place the peppers on a large baking pan and fill each with blue cheese crumbles. Place them under the broiler for about 10 minutes until the cheese is melted. Remove and drizzle with your favorite hot sauce.
