Preheat broiler (or oven grill) and place oven rack at the highest setting.
Test each pepper to see on which they will lie down level so when they are filled, they wont roll. Slice lengthwise a piece of pepper from the opposite side (refer to the pictures). Remove the seeds.
Place the peppers on a large baking pan and fill each with blue cheese crumbles. Place them under the broiler for about 10 minutes until the cheese is melted. Remove and drizzle with your favorite hot sauce.
