White Chocolate Cranberry & Pistachio Bark
White chocolate cranberry & pistachio bark is a lovely festive treat that is so easy to make that involves no cooking. Melted white chocolate is studded with dried cranberries and nutty pistachios then allowed to harden, then it’s ready for eating.
I’m feeling very festive with the striking red and green colors of this white chocolate cranberry & pistachio bark. An easy sweet treat of white chocolate studded with dried cranberries and pistachios.
I love the contrast of the colors of the pistachios and cranberries against the creamy white chocolate. It is such an easy and fast way to create a sweet after dinner treat that satisfies those sweet cravings, but you don’t feel so guilty because it has dried fruit and nuts.

The richness of white chocolate is cut with the tartness of the dried cranberries and the roasted pistachios give a great nutty crunch.
I buy the pistachios from Trader Joe’s that are already roasted, unsalted. If you cannot find pistachios already roasted, spread the nuts on a baking sheet and roast for 10 minutes at 350°F/177°C.
This bark would also be a lovely homemade gift for your kids teachers or give some to the mail man to give him and energy boost on his daily rounds. Just wrap a couple of pieces up in clear bags and tie with festive string or ribbon.
White Chocolate Cranberry & Pistachio Bark
Melted white chocolate is studded with dried cranberries and nutty pistachios then allowed to harden, then it's ready for eating.
Ingredients
- 11 ounces (312 grams) white chocolate chips
- 3 ounces (85 grams) dried cranberries
- 3 ounces (85 grams) roasted unsalted pistachios, shelled
Instructions
- Line a baking sheet with the parchment paper.
- Put the white chocolate chips in a microwave safe bowl. Microwave on high for 30 seconds, stir.
- Repeat, until the chocolate is completely melted. You can also use a double boiler (a heatproof bowl over a pan of simming water, make sure the bottom of the bowl does not touch the water). If adding any flavor extract, add to the chocolate before melting.
- Spread the chocolate onto the parchment paper into an even rectangle (about 8 x 10-inches, 20 x 25 )
- Sprinkle the dried cranberries and pistachios evenly over the chocolate.
- Refrigerate for 20 minutes.

If I want to add almond flavoring, what is the best way to do that without the bark seizing?
Add the almond flavoring to chocolate before it starts to melt to prevent seizing. I’m loving the almond flavor addition. Please let me know how it tastes. Enjoy!
Janette, for Xmas when I make this bark (and have done so since 2008), I added crushed Candy canes. to my mixture… not only is it festive, but for the holidays it is truly tasty!!

I only could find the salted pistachios, will they still work?
Hi Julie, yes they will work. Just remove some of the salt by spreading them on a towel and roll them around a little.
I use Costco ‘s salted pistachios all the time (without removing any salt) and it turns out great! Maybe the bit of salt works well with all the sweetness?.
