Why a Single Crust Makes the Ultimate Pie

When it comes to an authentic chicken mushroom pie, a single top crust is the secret to getting maximum satisfaction with half the effort. Skipping the bottom crust means zero risk of a soggy base, letting the rich filling take center stage while keeping every bite perfectly balanced.

Shortcrust vs. Puff Pastry

Both options bring something special to the table, so you really can’t go wrong:

  • Shortcrust Pastry: Rich, crumbly, and sturdy. Making a quick homemade shortcrust dough gives you an authentic British pub feel that holds up beautifully against a hearty gravy.
  • Puff Pastry: Light, flaky, and golden. For the ultimate time-saver, store-bought puff pastry bakes into gorgeous, airy layers that shatter under your fork and soak up the creamy sauce.

How to Make it (Step-by-Step)

Making this pie from scratch comes down to building incredible layers of flavor in a single skillet before baking. Here is a quick look at how the process comes together:

1. Cook the Chicken: Sear chicken pieces until browned and no longer pink, setting them aside to keep tender.

2. Cook the Mushrooms: Sauté the sliced mushrooms until deeply golden to release their rich, earthy flavor.

3. Combine Chicken & Mushrooms: Bring the chicken back into the pan with the mushrooms so every piece gets coated in those savory pan drippings.

4. Add Herbs, Milk & Broth: Stir in fresh herbs along with broth and milk (or cream) to build that silky, gravy-like sauce.

5. Top with Pastry & Bake: Cover the skillet with your choice of shortcrust or puff pastry, cut a small vent for steam, and bake until golden and bubbling.

Flavor Variations

While classic chicken and mushroom is a winning combo on its own, this filling takes to extra ingredients wonderfully:

  • Sweet Leeks: Sautéed leeks add a soft, subtle onion sweetness that naturally pairs with chicken and cream.
  • Crispy Bacon: Dice up smoked or unsmoked bacon and render it first. The smoky fat builds a deep, savory flavor base for your mushrooms.
  • Hearty Potato: Cubed golden potatoes simmered right in the sauce turn this into an all-in-one meal that keeps everyone full.
  • Tender Carrot: Thinly sliced carrots add a lovely pop of color and natural sweetness to round out the savory filling.
  • Crisp Green Beans: Trimmed and cut green beans add a vibrant pop of green, a pleasant bite, and fresh flavor to the rich filling.

Secrets to The Mushroom-Gravy Creamy Sauce

The magic of this chicken mushroom pie is in the sauce. To get that deep, savory taste reminiscent of homemade mushroom soup merged with rich gravy:

  • Brown the Mushrooms First: Don’t crowd the pan. Let the sliced mushrooms get deep and golden to unlock their natural umami.
  • Chicken Breasts or Thighs (or Leftover Rotisserie Chicken): Boneless, skinless chicken breasts cut into bite-sized pieces get deliciously tender in the gravy. Boneless thighs work great too, or if you are short on time, shredded leftover rotisserie chicken is a wonderful shortcut – just fold it into the creamy mushroom sauce right before topping with your pastry!
  • Build the Roux: Dusting your browned chicken and vegetables with a bit of flour before stirring in chicken stock and heavy cream creates a silky, thick gravy that coats the back of a spoon.

What to Serve with Chicken and Mushroom Pie

To turn this golden pie into a proper British feast, round out your plate with these classic side dishes:

  • Creamy Mashed Potatoes: A scoop of buttery Mashed Potatoes is perfect for soaking up every last drop of that velvety mushroom gravy.
  • Traditional Mushy Peas: Nothing says pub comfort quite like a side of bright, savory Mushy Peas.
  • Sweet Glazed Carrots: These easy Slow Cooker Carrots add a tender, sweet contrast to the rich filling.

Storing and Reheating Leftovers

If you happen to have any leftovers, this pie reheats wonderfully for an easy next-day lunch.

  • Refrigeration: Store leftover pie covered in an airtight container in the fridge for up to 3–4 days.
  • Reheating: For the best crisp crust, reheat your leftovers in a 350°F (175°C) oven or toaster oven for 12–15 minutes until warmed through and flaky. Avoid microwaving if possible, as it will make the pastry soft.

  • 1 ¼ pounds (567 grams)  boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • ¾ pound/12 ounces (340 grams) brown cremini/chestnut mushrooms, sliced
  • 1 cup (128 grams)  onion, peeled and chopped
  • 4 tablespoons (40 grams) all-purpose/plain flour
  • 1 cup (236 ml)  low sodium chicken stock/broth, warmed
  • ½ cup (118 ml) whole milk, warmed
  • ½ teaspoon (¾ gram)  dried thyme
  • 1 large egg + 1 splash of milk , whisked together for brushing on pastry

Pastry (Choose One)

Instructions

Partially Cook the Chicken:

  • Heat 2 tablespoons olive oil and 2 tablespoons butter in a large, non-stick, high-sided frying pan or Dutch oven over medium-high heat. Season the chicken pieces evenly with a sprinkle of salt and pepper. When the butter is melted and bubbly, add the chicken to the pan. Cook until no longer pink on the outside (it will finish cooking in the oven). Remove the chicken with tongs or a slotted spoon to a plate or bowl and set aside, leaving any remaining fat in the pan.

Cook the Mushrooms and Onion:

  • Add the remaining 2 tablespoons of oil and 2 tablespoons of butter over medium heat. When the butter is melted and bubbly, add the mushrooms. Cook without moving them too much at first, then add the onions. Stir often until the onions are softened and the mushrooms have reduced in size. Sprinkle with a little salt and pepper.
  • (Tip: Don’t salt the mushrooms before cooking, or they can release too much moisture.)

 Make the Sauce Base:

  • Lower the heat and sprinkle the flour evenly over the mushroom and onion mixture. Stir constantly for 1 to 2 minutes to cook out the raw flour taste. Stir in the thyme and return the cooked chicken to the pan.

Thicken:

  • Slowly pour in the chicken stock and milk while whisking continuously to prevent lumps. Bring to a gentle simmer until it thickens into a glossy gravy. Taste and adjust with extra salt, pepper, or thyme if needed. (Tip: You can prepare the filling up to this stage a day ahead. Transfer to a sealed container and refrigerate.)
  • Preheat your oven to 400°F / 200°C (180°C Fan for UK fan-assisted ovens). Lightly grease the pie pan using the extra butter.

Assemble the Pie:

  • Transfer the chicken and mushroom filling into a deep 9-inch (23 cm) pie dish or deep baking dish. Brush a little water or milk on the edge of the pie dish to help the pastry stick. Roll out the shortcrust pastry to fit (or drape the sheet of puff pastry) right over the top of the dish. Trim the edges, leaving a small overhang, and crimp or press firmly against the rim to seal. Cut two small slits in the center for steam to escape.
  • Brush the pastry generously with the egg wash. Bake for 25 to 30 minutes until the crust is puffed and golden brown.
