PREP Time: 45 MINUTES
Boil. Cook potatoes until soft .
Cool. Drain the potatoes and cool.
Mash. Press the potatoes through a ricer or mash really well.
Mix. Add flour, egg and salt to the potatoes.
Dough. Mix until it comes together.
Roll. Roll the dough into a log.
Cut. Cut into 3/4-inch (2 cm) pieces.
Roll. Roll over a board to create the ridges.
Roll. Or use a fork.
Store. Cook right away or store in the freezer.
