Crockpot Chicken Cacciatore is the perfect one pot meal that cooks itself while you’re away and you get to come home to the delicious aromas from a comforting, slow cooked meal.

Chicken cacciatore is hunter chicken (cacciatore meaning hunter). A comforting and hearty dish that will require fare la scarpetta (make the little shoe) which refers to the little pieces of bread used to mop up the sauce (the best part). You didn’t know that mopping you do at the end of a meal had a fancy Italian name, did you?

With meaty mushrooms, onions and capers, bring so much flavor and texture to chicken breasts all cooked in a tomato sauce.

I’ll admit, I don’t always wait until I sit down to eat to dunk a piece of bread into a  sauce.  I am guilty of periodically ‘tasting’ the sauce, or practicing scarpetta, as the dish cooks. Just to test for seasoning you understand.  ๐Ÿ˜€

For this particular dish I like to use bone in, skin on chicken thighs. Now, I am not a huge fan of dark meat chicken, but thighs stand-up better to longer cooking and they don’t dry out like chicken breasts. If you are not down with the thighs, by all means use breasts.

Why leave the skin on?

It’s like a little jacket for the meat and keeps it moist while it cooks, you can just remove it before serving. Bone-in because the bones give extra chicken flavor to the sauce and they can hold up to the long cooking time.


 
 
What I love about the long cooking time of this dish is the chicken gets so tender that it just falls off the bone. This  is a good thing, but you do have to be careful when you are removing the chicken from the sauce to make sure get all the bones out, should any fall back into the sauce.
 

Serving suggestion:

Serve over fresh, homemade tagliatelle pasta

Crockpot chicken cacciatore. Chicken breasts cooked low and slow with mushrooms, onions, garlic, capers and white wine in a tomato sauce.

Prep Time 5 minutes
Cook Time 6 minutes
Total Time 11 minutes

Ingredients

  • 1-28 ounce can crushed tomatoes
  • 3/4 cup dry white wine
  • 8 ounces mushrooms of your choice, chopped
  • 1 large onion, sliced
  • 2 cloves garlic, peeled and grated
  • 3 tablespoons capers, drained
  • 2 tablespoons fresh basil, plus 1 tablespoon more for garnish, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 bone-in, chicken breasts or thighs skin removed

Instructions

  1. To a 4-quart crockpot add all of the ingredient except the chicken. Stir to mix well.
  2. Add the chicken and make sure they are submerged.
  3. Cook on high for 3-4 hours or low for 5-6 hours.
