Crockpot Chicken Cacciatore
Crockpot Chicken Cacciatore is the perfect one pot meal that cooks itself while you’re away and you get to come home to the delicious aromas from a comforting, slow cooked meal.

Chicken cacciatore is hunter chicken (cacciatore meaning hunter). A comforting and hearty dish that will require fare la scarpetta (make the little shoe) which refers to the little pieces of bread used to mop up the sauce (the best part). You didn’t know that mopping you do at the end of a meal had a fancy Italian name, did you?
With meaty mushrooms, onions and capers, bring so much flavor and texture to chicken breasts all cooked in a tomato sauce.

Why leave the skin on?
It’s like a little jacket for the meat and keeps it moist while it cooks, you can just remove it before serving. Bone-in because the bones give extra chicken flavor to the sauce and they can hold up to the long cooking time.

Crockpot Chicken Cacciatore

Crockpot chicken cacciatore. Chicken breasts cooked low and slow with mushrooms, onions, garlic, capers and white wine in a tomato sauce.
Ingredients
- 1-28 ounce can crushed tomatoes
- 3/4 cup dry white wine
- 8 ounces mushrooms of your choice, chopped
- 1 large onion, sliced
- 2 cloves garlic, peeled and grated
- 3 tablespoons capers, drained
- 2 tablespoons fresh basil, plus 1 tablespoon more for garnish, chopped
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 bone-in, chicken breasts or thighs skin removed
Instructions
- To a 4-quart crockpot add all of the ingredient except the chicken. Stir to mix well.
- Add the chicken and make sure they are submerged.
- Cook on high for 3-4 hours or low for 5-6 hours.

Fall screams crockpot recipes to me, so this looks perfect for the upcoming cooler weather. I love the bone-in chicken – so many crockpot recipes call for chicken breasts, but they dry out so quickly. Bone in thighs give you so much more freedom if you work all day and your crockpot is running for 10 hours!
Chicken cacciatore is definitely a favorite in my house, so I love the idea of making it in a slow cooker! I usually use boneless/skinless thighs, but bone in/with skin is such a great solution for the all the challenges that come with cooking meat in the slow cooker. I’m definitely going to have to try your version!
