Making the most of the last days of summer with these delicious Buffalo Sauce Burgers with Blue Cheese Celery Slaw. In a summery kind of way, the burgers spice things up with just a bit of heat and the slaw helps cool things off, perfectly balanced.

What tastes best with buffalo sauce? Blue cheese and celery of course! And this burger has it all! This trifecta of flavors is a taste-sensation for your tastebuds.

For me, it is mandatory that buffalo anything be served with celery and blue cheese. To start, buffalo sauce is mixed into the burger meat. Then, to cool your palette, a crispy coleslaw with celery mixed with blue cheese dressing, PLUS, extra blue cheese for good measure (which never hurts).

Blue cheese dressing is an easy and tasty sauce for coleslaw. If you like to make your own (as I do, and it’ sooooo simple to make), try my Chunky Blue Cheese Dressing.

To make easy work of the coleslaw (if my store has it) I buy pre-shredded cabbage and add my own sliced celery. The celery adds a lovely fresh flavor and needed crunch.

The blue cheese coleslaw has more uses than just this burger. I love it on top of Slow Roasted Pulled Pork Sandwiches, as a side dish for Ribs, or Buffalo Rosemary Chicken Skewers.

I typically don’t  mix anything with my burger meat unless it’s to flavor the meat. This is the case with my Chipotle Chicken Burger and Caramelized Red Pepper & Onion Burger.

I primarily use beef for these burgers, but ground turkey or chicken would also be delicious if that’s your preference.

Buffalo Sauce Burgers with Blue Cheese Celery Slaw

Spicy buffalo sauce is mixed with the burger meat, topped with a celery slaw mixed with blue cheese dressing.

Ingredients

  • For the blue cheese celery slaw:
  • 4 cups (200 grams) shredded cabbage or coleslaw mix
  • 1 cup (105 grams) thinly sliced celery
  • ½ cup (120 grams) blue cheese dressing *see note
  • For the burgers:
  • ½ cup cayenne pepper hot sauce (Franks Red Hot Original)
  • ⅓ cup melted butter or ghee
  • 1 ½ pounds (680 grams) ground beef
  • Blue cheese crumbles

Instructions

  1. For the blue cheese celery slaw:
    To a large bowl add the cabbage and celery, or coleslaw mix. Add the blue cheese dressing and mix well, cover and refrigerate.
  2. For the burgers:
  3. To a small bowl, mix the hot sauce and melted butter together. Add the meat to a bowl and add 4 tablespoons buffalo sauce. You don’t want the meat too wet or the burgers will fall apart. Use a fork to mix well, then divide the meat into 4 equal portions (6.6 ounces/189 grams each) and shape into burger patties.
  4. To grill:
    Preheat your grill on high. Grill the burgers on high on the first side for 3-4 minutes until lightly charred. Flip and cook to your preferred temperature. Just before they are done, top with blue cheese crumbles to melt.
  5. To pan fry:
  6. Heat 2 tablespoons oil in a heavy or cast iron pan over high heat. When the oil is hot, add the burgers and char on the first side for 3-4 minutes, flip and cook. Just before they are done, top with blue cheese crumbles to melt.
  7. Serve on buns topped with the slaw and remaining buffalo sauce.

You can make my chunky blue cheese dressing or use any of your favorite.
