Banoffee Milkshake Ingredients & Why They Work

  • Ripe Bananas: Sliced and frozen solid to build a thick, frosty base without needing vanilla ice cream to dilute the banana flavor.
  • Digestive Biscuits or Graham Crackers: Tossed straight into the blender to infuse every sip with a buttery pie crust flavor.
  • Whole Milk & Heavy Cream: Whole milk thins the blend for easy blending, while heavy cream adds a light, velvety texture.
  • Caramel Sauce or Dulce de Leche: Delivers the signature gooey, toffee sweetness.
  • Classic Toppings: Finished with extra whipped cream, biscuit crumbs, and dark chocolate shavings for a tasty 5-minute dessert.

The Secret to a Thick Milkshake Without Ice Cream

The trick to a thick, restaurant-quality banana caramel shake without using ice cream comes down to two simple elements: frozen fruit and heavy cream.

Freezing ripe banana slices creates a frosty, custard-like base. Pairing that cold fruit with a splash of heavy cream adds the necessary fats to build a luxurious, pourable texture that holds up to heavy toppings.

Step-by-Step

Prep the Glasses & Rim

Dip the top of each glass in a little caramel. Then roll it in fine digestive biscuit or graham cracker crumbs.

Recipe Variations & Substitutions

Graham Crackers vs. Digestive Biscuits

Traditional Banoffee Pie uses British digestive biscuits (like McVitie’s) for a distinct wheat flavor. If you cannot find them, a standard graham cracker crust crumble or honey graham crackers work as a seamless substitute.

Caramel Sauce vs. Dulce de Leche

Store-bought ice cream topping works great here, but canned Dulce de Leche gives an even deeper, richer taste reminiscent of a classic toffee milkshake.

Making it Vegan or Dairy-Free

Swap the milk and heavy cream for full-fat canned coconut milk, use dairy-free vegan sweet drizzle, and ensure your biscuit crumbs are plant-based.

Tips for the Best Results

  • Use Very Ripe Fruit: Look for peelings with plenty of brown spots before freezing. Spotty bananas offer maximum natural sweetness and deep flavor.
  • Chill Your Milk & Cream: Ensure your liquids are ice-cold straight from the fridge so the frozen fruit does not melt too quickly during processing.
  • Don’t Over-Process: Run your machine just until smooth so the biscuits incorporate into a velvety texture without making your banana caramel shake runny.

More Dessert Milkshakes & Boozy Treats

I love a good dessert milkshake. This one is similar to my Salted Caramel Date Shake – or, if you want to turn up the party, you can serve a round of boozy Irish Coffee Milkshake Shots.

Can I make this ahead of time?

You can. It refrigerates well for a couple of hours. Give it a quick pulse right before serving if any natural separation occurs.

Can I add ice if my fruit isn’t frozen?

Adding ice will water down the milkshake dilute the flavor. Make the drink as directed and let it chill in the refrigerator for 20 minutes before serving.

What kind of chocolate is best for topping?

A bar of dark or milk chocolate that you would eat works best. Run a vegetable peeler along the edge of the bar to create elegant chocolate shavings over the whipped cream.

Ingredients

  • 4 bananas sliced and frozen for 1 hour
  • 8 English digestive biscuits (plus 2 for the rim) or 18 square graham crackers (plus 4 for the rim)
  • 1 ¼ cups (296 ml)  cold whole milk
  • 1 cup (120 grams)  whipped cream, plus more for garnish
  • ⅔ cup (120 grams)  caramel sauce or dulce de leche, plus more for rim
  • Chocolate for shaving on top

Instructions

Yields 4 cups/32 ounces/954 ml

    Freeze The Bananas:

    • Slice the bananas and arrange them in a single layer on a parchment-lined baking sheet or plate. Freeze for at least 1 hour, or until firm. If you don't have time to do this, skip and refrigerate the milkshake after blending.

    Prep The Glasses:

    • Place the extra biscuits (or graham crackers) in a resealable plastic bag and crush them into fine crumbs. Transfer to a small bowl or shallow plate. Lightly brush or dip the rims of four 8 ounce/235 ml glasses with caramel sauce, then roll the rims in the biscuit crumbs to coat evenly. Set the glasses in the fridge while you make the milkshake.

    Blend:

    • Add the frozen banana slices, remaining biscuits, milk, whipped cream, and caramel sauce to a blender. Blend on high until completely smooth and creamy.

    Serve:

    • Divide the milkshake among the prepared glasses. Top with generous swirls of extra whipped cream and shave fresh chocolate over the top using a vegetable peeler.
