Easy tomato basil soup in just 30 minutes
There’s nothing quite like a bowl of homemade tomato basil soup—cozy, and full of fresh flavor. This quick and easy version comes together in just 30 minutes. Using simple ingredients like ripe tomatoes, garlic, fresh basil and vegetable stock. It’s perfect for busy weeknights or whenever you’re craving comfort without the wait. Serve it with a grilled cheese or a hunk of crusty bread, and you’ve got a classic meal that never goes out of style.
Soften onions in oil

To a large soup pan, add 1 ½ tablespoons olive oil over medium heat. When hot add 1 cup chopped onions. Cook, stirring often until they soften.
Add garlic

Add 1 garlic clove, finely chopped or grated. Cook for only 1 minute, don’t allow the garlic to brown.
Stir in tomato paste

Add 1 tablespoon tomato paste. Stir to mix into the onion and garlic.
Add tomatoes

Add 8 ripe tomatoes (chopped) or one, 28-ounce can whole or crushed tomatoes.
Add cannellini beans

Add one 15-ounce can of drained cannellini beans.
Add chopped basil

Stir in 3 tablespoons fresh basil, chopped.
Add vegetable stock

Add 2 cups low sodium vegetable broth or stock.
Season with salt and pepper

Season with 1 ½ teaspoons salt (this will depend on how salty your stock is) and ¼ teaspoon freshly ground black pepper. Allow to simmer for 10 minutes, uncovered.
Blend

Use an immersion blender to blend until smooth. You can also allow it to cool slightly, then add to a blender in small batches. Taste and add more seasoning if needed.
Enjoy

Serve warm with a grilled cheese sandwich or crusty bread.
