Creamy Almond Coconut Cashew Coffee
This creamy almond coconut cashew coffee will be your new chilly morning wake-me-up drink that is dairy free. Healthy almond milk is blended and thickened with coconut oil, cashews and a little honey for a creamy coffee creamer. This is Bulletproof coffee meets healthy latte.
Is there anything better than being able to get a creamy delicious coffee drink right from your own kitchen? Look no further! This is my new cold weather morning drink that healthy and creamy all at the same time. The milk just on its own is so good. It’s so thick and comforting, you could enjoy a hot mugful before bed.
Bulletproof coffee is made with fatty butter and if you don’t know what it is, Google it. Who wants butter in their coffee? This recipe makes a lovely and really delicious creamer that is dairy free, sugar free and so much better for you than any creamer you can buy.
There are other benefits that go along with this coffee drink, a little protein from the cashews and almond milk. Coconut oil is easier to digest and can strengthen your immune system which is important this time of year. As well as helping control blood sugar, this is the best way to enjoy a nice hot cup of coffee right from your kitchen.

Cashews are added to the creamer for a variety of reasons. They are first soaked in hot water, this is to help them soften and blend easily and soaking also breaks down the phytic acid and neutralize the enzymes to make them easier to digest, in addition, they add a little protein and help thicken the milk.
I added a little honey as as I think a slight sweetness enhances the coconut flavor. You can omit or add to taste.
This drink is also a time saver. You don’t have to go through these steps every morning. Make a large batch Sunday night, refrigerate and you can just warm your coffee cup in the microwave the next morning. This would also make a delicious chilled coffee drink for the warmer mornings.
Creamy Almond Coconut Cashew Coffee

Healthy almond milk is blended and thickened with coconut oil, cashews and a little honey for a creamy coffee creamer.
Ingredients
- 1/3 cup unsalted, raw cashews , soaked in hot water for 15 minutes
- 1 cup (236 ml) almond milk, unflavored, unsweetened
- 2 teaspoons coconut oil, melted
- 1 teaspoon good honey (or to taste)
- 1 cup (236 ml) brewed coffee, hot
Instructions
- To a blender or NutriBullet, add the cashews, almond milk, coconut oil and honey. Blend until smooth.
- Pour the milk into a heat proof jug and microwave for 1 1/2 minutes until hot, not boiling. Stir.
- Pour the brewed coffee into your favorite coffee mug about 2/3 full and top with the almond milk blend.
Notes
Make the creamer ahead and store in the fridge covered for 1 week. Warm as you need it.
This also makes a delicious cold drink for the summer.
