Creamy Almond Coconut Cashew Coffee

Healthy almond milk is blended and thickened with coconut oil, cashews and a little honey for a creamy coffee creamer. This also makes a delicious cold drink for the summer.

⅓ cup unsalted raw cashews , soaked in hot water for 15 minutes 1 cup (236 ml) almond milk, unflavored, unsweetened 2 teaspoons coconut oil melted 1 teaspoon good honey or to taste 1 cup (236 ml) brewed coffee, hot
To a blender or NutriBullet, add the cashews, almond milk, coconut oil and honey. Blend until smooth.
Pour the milk into a heat proof jug and microwave for 1 1/2 minutes until hot, not boiling. Stir.
Pour the brewed coffee into your favorite coffee mug about 2/3 full and top with the almond milk blend.
Make the creamer ahead and store in the fridge covered for 1 week. Warm as you need it.
