How to Make Chicken Bone Broth

Ingredients

  • 7 pounds (3.1 kg) whole chicken
  • 1 head celery largely chopped
  • 1 pound (453 grams) large carrots, largely chopped
  • ¾ pound (283 grams) parsnips, largely chopped
  • 1 pound (453 grams) onion, quartered
  • 2 whole heads of garlic unpeeled, cut in half
  • 1 bunch fresh parsley
  • 1 large bunch fresh dill
  • 1 tablespoon salt
  • 2 teaspoons whole black peppercorns
  • 2 bay leaves fresh or dried
  • 18 cups (4.25) liters water

Instructions

  • Add all of the ingredients to an 8 quart (7.5 liter) pan and cover with water.
  • Simmer for 2 hours uncovered, then strain through a sieve into a fat separator.
  • Pour into containers with lids. The stock will keep up to 1 week refrigerated or 3 months in the freezer.
