Grilled Shrimp with Ginger Lemon Dipping Sauce

Sweet shrimp are marinated in lemon, garlic, salt and pepper, then grilled. The ginger lemon dipping sauce is the perfect accompaniment for a dish that is the perfect appetizer

Ingredients

For the marinade:

  • Zest of 1 lemon
  • ¼ cup (60 ml) fresh lemon juice (1 large lemon)
  • 1 garlic clove grated
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 1 pound jumbo shrimp 21-25 count, peeled and deveined

For the dipping sauce:

  • 1 cup (215 grams) sour cream
  • Juice and zest of 1 lemon
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • Small pinch freshly ground pepper to taste

Instructions

  • To a large bowl add the lemon zest, juice, garlic, olive oil, salt and pepper. Whisk until combined. Add the shrimp to the marinade and stir to coat well. Refrigerate for 1 hour.
  • Preheat grill.
  • To a mixing bowl, add the sour cream, lemon juice and zest, ginger, salt and pepper. Stir to mix well. If it is too thick, add a splash of water to thin. Refrigerate.
  • If using wooden skewers, soak them in water for 20 minutes.
  • After 1 hour, remove the shrimp from the marinade and thread onto skewers.
  • Grill the shrimp on the first side for about 3 minutes, turn and grill for 1-2 minutes, just until they are pink. Remove from the grill and when cool enough take them off the skewers.
  • Serve warm with the ginger lemon dipping sauce.
