Ingredients

Yields 4 cups/32 ounces/1 liter

  • 1 tablespoon vegetable oil
  • 1 cup (104 grams) onion finely chopped
  • 6 slices bacon finely chopped
  • 2 cloves garlic minced or grated
  • 1 chipotle pepper from a can chipotle peppers in adobo sauce chopped
  • ¼ cup (60 ml) sauce from chipotles in adobo
  • 4 cups (35 ounces/1 kg) tomato purée/passata
  • 4 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt or to taste

Instructions

  • Add the oil to a large saucepan over medium heat. Add the onions and bacon, cook until the bacon is cooked. Add the garlic and cook for 1 minute. Add the chopped chipotle pepper, adobo sauce, tomato sauce, apple cider vinegar, honey and salt stir well. Simmer for 10 minutes until thickened.
  • Allow the sauce to cool for 5 minutes, then transfer to a food processor or blender and blend until smooth.
  • Transfer to sterilized jars with lids and refrigerate for up to 2 weeks.
