1chipotle pepper from a can chipotle peppers in adobo saucechopped
¼ cup (60 ml) sauce from chipotles in adobo
4 cups (35 ounces/1 kg) tomato purée/passata
4tablespoonshoney
1tablespoonapple cider vinegar
½teaspoonsaltor to taste
Instructions
Add the oil to a large saucepan over medium heat. Add the onions and bacon, cook until the bacon is cooked. Add the garlic and cook for 1 minute. Add the chopped chipotle pepper, adobo sauce, tomato sauce, apple cider vinegar, honey and salt stir well. Simmer for 10 minutes until thickened.
Allow the sauce to cool for 5 minutes, then transfer to a food processor or blender and blend until smooth.
Transfer to sterilized jars with lids and refrigerate for up to 2 weeks.
