Blueberry Coconut Frozen Yogurt Popsicles

Blueberry purée and whole blueberries are mixed with Greek yogurt, then frozen into protein-packed Blueberry Coconut Frozen Yogurt Popsicles.

Ingredients

  • ½ cup (36 grams) frozen blueberries, plus 40 more for adding to the popsicles
  • 1 cup (245 grams) coconut Greek yogurt

Instructions

  • To a blender, add the ½ cup blueberries and 1 teaspoon water, blend until smooth. Set aside.
  • To a bowl, add the yogurt and the pureed blueberries. Use 2 toothpicks to swirl.
  • Add 2 whole blueberries to the bottom of the popsicle molds, fill 1/3 with yogurt mix, add 2 more blueberries and top with more yogurt mix. Fill 8  molds, add sticks and freeze 8 hours, or overnight.
  • To remove the popsicles, run under warm water to loosen. Avoid running the water near the sticks. Remove and enjoy.
