Apple Stuffed, Bacon Wrapped Dates

Sweet apples stuffed into in plump dates, all nicely wrapped in bacon and baked.

Ingredients

  • 16 Medjool dates pitted
  • 1 medium sweet apple peeled
  • 8 slices bacon cut in half *
  • 16 toothpicks

Instructions

  • Preheat oven to 400°F/200°C.
  • Add a wire rack to a baking sheet/tray
  • Chop the apple into pieces that are as long as your dates. Add a piece of apple to the center of each date and close and press to seal. Wrap each date in a slice of bacon and secure with a toothpick. If making ahead, prepare up to this step and refrigerate until ready to bake.
  • Arrange the dates on the baking rack and bake for 20 minutes or until bacon is brown and crisp.

Note: * This is smoked streaky bacon for my U.K friends. Only make them long enough to wrap once around the dates with a little overlap.
