Mango Coconut Mocktail

A delicious alchol-free drink for spring and summer with mango juice, lime, coconut milk and ginger ale.

Ingredients

  • 1 ¼ cups (160 ml) mango juice or mango nectar
  • 2 teaspoons fresh lime juice
  • 2 teaspoons coconut milk strained for lumps * see note
  • ½ cup (75 ml) ginger ale ** see note
  • 2 limes

Instructions

  • Grate the 2limes and place the zest on a plate. Cut a wedge from one of the limes and use it to rub on half the rim of your serving glasses. Dip the wet part of the glass edge in the lime zest to coat. Repeat with the other glass. Thinly slice the lime for garnish.
  • Add the rest of the  ingredients to a large jug. Stir to mix well. Add ice to the rimmed glasses and pour the drink into the 2 glasses. Garnish with lime slices. This recipe makes 2 drinks.

Notes

* Coconut cream will alter the thickness of the drink as it is thicker than coconut milk
** If you use ginger ale, the ginger flavor will be stronger
