Linguine with Shrimp (Linguine con Gamberi)

Ingredients

  • 3 ounces (85 grams) linguine
  • Salt
  • 12 large uncooked shrimp, peeled and deveined
  • Ground black pepper
  • 1 tablespoon olive oil
  • 1 garlic clove finely chopped or grated
  • 1/3 cup white wine
  • Zest and juice of 1 lemon
  • ½ pound cherry tomatoes halved
  • ¼ teaspoon salt
  • Small pinch ground black pepper
  • 1 ½ teaspoons fresh dill chopped

Instructions

  • Fill a large pan with water and bring to a boil. Once boiling, add salt so it tastes like the ocean. Add the linguine and cook 2 minutes shy of the recommended time on the package.
  • While the linguine cooks, add the olive oil to a large sauté pan over medium heat.
  • Lightly season the shrimp with salt and pepper. Cook the shrimp for 1 minute per side, remove from the pan. 
  • Add the garlic and cook for 1 minute, stir in the wine and cook until slightly reduced. Add the lemon zest, juice, tomatoes, salt and pepper.  Cook for a 2 minutes.
  • Drain the linguine and to the  shrimp and tomatoes. Use tongs to toss and mix well.  Add the dill and mix.  Serve immediately
