Indian Apple Chutney

Ingredients

  • 2 tablespoons oil
  • 1 teaspoon yellow mustard powder
  • 1 teaspoon garam masala
  • ¼ teaspoon ground cardamom
  • ½ teaspoon turmeric powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon fresh ginger grated
  • ½ teaspoon salt
  • Red chili flakes for optional spice
  • 3 ½ cups (395 grams) sweet red apples about 3, peeled and chopped
  • 1 teaspoon granulated sugar
  • 8 tablespoons white/clear vinegar
  • 2 tablespoons water if needed

Instructions

  • To a medium sauce pan add oil over low heat. Add all the spices and salt (add chili flakes to make it spicy) stir into the oil. Cook for 1 minute, turn down heat if it gets too bubbly.
  • Add the chopped apple and sugar, stir to mix well so the apples are coated in spices and sugar. Add the vinegar and turn up the heat to medium-low, just until it is lightly bubbling, cover and cook for 40 minutes until the apples have softened, stirring occasionally.
  • When the apples are soft, you can leave it chunky, or mash the apples to your desired texture and add water if needed.
  • Store refrigerated in a well sealed container for up 2 weeks. You can freeze it for up to 3 months.
