3 ½ cups (395 grams) sweet red applesabout 3, peeled and chopped

Instructions
To a medium sauce pan add oil over low heat. Add all the spices and salt (add chili flakes to make it spicy) stir into the oil. Cook for 1 minute, turn down heat if it gets too bubbly.
Add the chopped apple and sugar, stir to mix well so the apples are coated in spices and sugar. Add the vinegar and turn up the heat to medium-low, just until it is lightly bubbling, cover and cook for 40 minutes until the apples have softened, stirring occasionally.
When the apples are soft, you can leave it chunky, or mash the apples to your desired texture and add water if needed.
Store refrigerated in a well sealed container for up 2 weeks. You can freeze it for up to 3 months.
