These grilled lemongrass chicken skewers are one of the easiest and most flavorful dishes you can grill up this summer. If you haven’t cooked with lemongrass, you need to start with this easy recipe.
4lemongrass stalkstough outer layers removed, then chopped
½small red chili pepperseeds removed
1garlic clovepeeled and chopped
½cup(118 ml) soy sauce
½cup(118 ml) water
1teaspoontoasted sesame oil
1tablespoonfresh gingerpeeled and chopped
1tablespoonhoney
⅓cup(78ml) vegetable oil
4bonelessskinless chicken breasts
Instructions
Add all of the ingredients (expect chicken) to a high-powered blender, blend until smooth.
Add the chicken pieces to a zipper bag and pour over all but 1/3 of the marinade. Seal and refrigerate for 2 hours to overnight.
Preheat grill on high.
Thread the chicken onto metal skewers. When the grill is ready, add the chicken skewers and cook for 4-5 minutes on the first side. Turn and brush the cooked side with the remaining marinade and cook for 2-3 more minutes.
