Grilled Lemongrass Chicken Skewers

These grilled lemongrass chicken skewers are one of the easiest and most flavorful dishes you can grill up this summer. If you haven’t cooked with lemongrass, you need to start with this easy recipe.

Ingredients

  • 4 lemongrass stalks tough outer layers removed, then chopped
  • ½ small red chili pepper seeds removed
  • 1 garlic clove peeled and chopped
  • ½ cup (118 ml) soy sauce
  • ½ cup (118 ml) water
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon fresh ginger peeled and chopped
  • 1 tablespoon honey
  • cup (78ml) vegetable oil
  • 4 boneless skinless chicken breasts

Instructions

  • Add all of the ingredients (expect chicken) to a high-powered blender, blend until smooth.
  • Add the chicken pieces to a zipper bag and pour over all but 1/3 of the marinade. Seal and refrigerate for 2 hours to overnight.
  • Preheat grill on high.
  • Thread the chicken onto metal skewers. When the grill is ready, add the chicken skewers and cook for 4-5 minutes on the first side. Turn and brush the cooked side with the remaining marinade and cook for 2-3 more minutes.
