Grilled Barbecue Spare Ribs

Grilled barbecue spare ribs are dry rubbed, roasted to make them tender, then grilled with barbecue sauce for that fall-off-the-bone for a melt-in-your-mouth experience.

Ingredients

  • ½ cup light or dark brown sugar
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • ½ tablespoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 4-6 pounds (2 - 3 kg) pork spare ribs
  • Barbecue sauce

Instructions

  • Mix all the spice rub ingredients in a bowl. Rub all over the ribs and massage well into the meat.
  • Wrap in plastic wrap for 2 hours, overnight is better.
  • Remove the ribs from the plastic wrap and allow to sit at room temperature for 1 hour before cooking.
  • Preheat oven to 350°F/177°C.
  • Add the ribs to a foil pan or baking sheet lined with foil, meat-side up. Pour over some of the barbecue sauce.
  • Cover tightly with foil and roast for 1 ½ hours.
  • Preheat outdoor grill on high. Place the rack of ribs bone side down for about 5-7 minutes. Turn and repeat
  • Serve with more sauce.
