Ingredients

  • (3 pounds/1.3 kg) whole pineapple peel and cut into bite size pieces
  • 1 whole jalapeño pepper seeds removed, finely chopped
  • ⅓ cup (40 grams) red onion finely chopped
  • ¾ cup 100 grams fresh tomato, chopped (1 medium, cherry or grape tomatoes can also be used)
  • cup (4 grams) a good handful fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • ½ teaspoon salt plus more if needed

Instructions

  • Add the pineapple, jalapeño, onion, tomato and cilantro to a bowl, stir until evenly mixed. Add the lime juice and salt and stir until well combined. Taste and add more salt if needed.
