1teaspoonfresh rosemarychopped
8slicesgood bread
2cups(400 grams) sharp white cheddar cheese, grated
8fresh figssliced
4slicesof prosciutto
Instructions
To a bowl, add the butter and rosemary, mix well. Set aside.
Lay out 8 slices of bread and spread an even layer of the rosemary butter on one side of each.
Preheat a heavy frying pan or cast iron pan over medium heat.
Working in batches, depending on how big your pan is, place slices of bread, butter-side down in the pan.
Top each with 1/4 cup (100 grams) grated cheese, fig slices, then a slice of prosciutto. Top with the rest of the cheese and the other slice of bread, butter-side up.
Cover with a lid or foil until the bottom is browned and the cheese starts to melt. Flip onto the other side and cook until that side is browned.
