Fig and Prosciutto Grilled Cheese with Rosemary Butter

Ingredients

  • 4 tablespoons salted butter softened to room temperature
  • 1 teaspoon fresh rosemary chopped
  • 8 slices good bread
  • 2 cups (400 grams) sharp white cheddar cheese, grated
  • 8 fresh figs sliced
  • 4 slices of prosciutto

Instructions

  • To a bowl, add the butter and rosemary, mix well. Set aside.
  • Lay out 8 slices of bread and spread an even layer of the rosemary butter on one side of each.
  • Preheat a heavy frying pan or cast iron pan over medium heat.
  • Working in batches, depending on how big your pan is, place slices of bread, butter-side down in the pan.
  • Top each with 1/4 cup (100 grams) grated cheese, fig slices, then a slice of prosciutto. Top with the rest of the cheese and the other slice of bread, butter-side up.
  • Cover with a lid or foil until the bottom is browned and the cheese starts to melt. Flip onto the other side and cook until that side is browned.
