Asian-Style Grilled Mushroom Skewers

Mushrooms are marinated in an easy, delicious sauce, skewered then grilled.

- 6 tablespoons soy sauce
- 2 tablespoons peanut or vegetable oil
- 3 tablespoons rice vinegar
- 3 teaspoons honey
- 2 scallions finely chopped
- 2 garlic cloves grated
- 2 teaspoons ginger grated
- Small pinch ground black pepper
- 1 pound (453 grams) brown mushrooms cut in half
Add all the ingredients except the mushrooms to a bowl.
To a large bowl, add the mushrooms and cover with the marinade. Allow to sit at room temperature for 30 minutes.
Preheat grill.
After 30 minutes, thread the mushrooms onto skewers. If you’re using wooden skewers, I advise to soak them before using if grilling outside.
When your grill is hot, grill on each side until they get a little char and are cooked. About 5-7 minutes for the first side, then 3-4 for the second.
