Asian-Style Grilled Mushroom Skewers

Ingredients

  • 6 tablespoons soy sauce
  • 2 tablespoons peanut or vegetable oil
  • 3 tablespoons rice vinegar
  • 3 teaspoons honey
  • 2 scallions finely chopped
  • 2 garlic cloves grated

  • 2 teaspoons ginger grated 

  • Small pinch ground black pepper
  • 1 pound (453 grams) brown mushrooms cut in half

Instructions

  • Add all the ingredients except the mushrooms to a bowl.
  • To a large bowl, add the mushrooms and cover with the marinade. Allow to sit at room temperature for 30 minutes.
  • Preheat grill.
  • After 30 minutes, thread the mushrooms onto skewers. If you’re using wooden skewers, I advise to soak them before using if grilling outside.
  • When your grill is hot, grill on each side until they get a little char and are cooked. About 5-7 minutes for the first side, then 3-4 for the second.
