Growing up in England, Walkers Shortbread was a staple in our kitchen cabinet. With my Scottish heritage and living only 300 miles from the factory, Walkers shortbread was always the first and foremost choice when it came to a sweet treat.
Joseph Walker opened his first bakery in 1898 in Scotland at the young age of twenty-one with one intention – to produce the best shortbread ever. He certainly succeeded and Walkers Shortbread have since expanded their product range over the years having introduced lovely gift boxes, seasonal treats cakes, tarts and adding chocolate chips to their shortbread cookies as well as making them into unique, fun animal shapes.

While shortbread is one of my weaknesses; chocolate is another. On one particular rainy day, I was feeling in the mood for some chocolate so I grabbed a bag of white chocolate chips and a bag of shelled pistachios from the pantry. As I was waiting for the water to boil for my tea, I was snacking on the chocolate and pistachios (which make for a delicious flavor combo) and wondered what they would taste like with the shortbread. Yum! And a lightbulb went on.
What if I was to dip half of the shortbread in melted white chocolate, then coat it in crushed pistachios? My husband thought this was a truly perfect idea and was eager to try the result. Hmm, what about adding a bit of lemon zest for a crisp, spring like flavor?

So, here you have it. Walkers Shortbread Cookies dipped in melted white chocolate, sprinkled with fresh lemon zest and coated in crushed pistachios. We have a springtime winner of a treat!

- 1/2 cup white chocolate
- Zest of 1 lemon
- 1/3 cup pistachios, shelled and crushed into crumbs
- 8 Walkers Shortbread cookies
- To a microwave safe bowl, add the chocolate chips. Microwave on 50% power for 30 seconds, stir and repeat until the chocolate is melted.
- While the chocolate is warm, dip half of a cookie in the chocolate, sprinkle with a little lemon zest and coat with the pistachio. Place on a cooling rack to set.
