You can make these Sausage Stuffed Potato Dumplings for your Thanksgiving/Christmas dinner, or, make them using your leftover mashed potato and you can make them vegetarian. They are also make a delicious weekend breakfast idea.

Sausage and potato are a delicious combination. Taking some help from purchased sausages for the filling that are fried that results in a crispy outside, and fluffy inside.

I also have a vegetarian potato dumpling idea for you, substitute the sausage meat for chopped mushrooms or vegetarian/vegan sausage meat. There are some delicious options out there.

Potato dumplings are a popular dish in Europe and each country has their own version.

Sweden have ‘kroppkakor’, which are usually filled with pork and onions. Germany have ‘kartoffelkloesse’ where the potatoes are mixed with egg, flour and nutmeg, that are not stuffed and they boil them.

This recipe is very similar to Polish Potato Dumplings (Kopytka) that are made using mashed potato, minus the sausage.

SAUSAGE STUFFED POTATO DUMPLINGS – STEP BY STEP

Potatoes are cooked, mashed and allowed to cool. Sausage is cooked with onion, sage and fennel seeds for extra flavor. The mash is formed into a flat pancake shape, the sausage is placed in the center, then another potato pancake is placed over and shaped into dumplings then shallow fried.

Since the basis of this recipe is mashed potato, I have a great trick for quick cooking potatoes that I also use for Creamy Microwave Mashed Potatoes. Poke holes in whole potatoes with a fork and microwave them 1 at a time on high for 4 minutes, turn over and repeat. Allow to cool enough to handle, then they are easy to peel and mash.

Sausage Stuffed Potato Dumplings

Mashed potato is turned into dumplings that are stuffed with sausage meat.

Total Time 21 minutes

Ingredients

  • 16 ounces (453 grams) turkey or pork sausage, removed from it's casing
  • 1 cup (128 grams) yellow onion, finely chopped
  • 1 teaspoon dried sage
  • 1 teaspoon fennel seeds
  • 5 cups (700 grams) leftover mashed potato * see note
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg
  • 1 tablespoon flour
  • Vegetable oil

Instructions

  1. To a sauté pan over medium heat, add the sausage meat, onion, sage and fennel. Cook while breaking up the meat as it browns, about 10 minutes. Transfer to a bowl and set aside.
  2. To the mashed potato add the salt, pepper, egg and flour. Mix well until the egg and flour are well combined. Take a golf ball size handful of potato and shape into a flat pancake. Place 1 tablespoon of sausage in the center, then place another pancake of potato on top, sealing the edges. Shape into 'hockey' puck shapes. Refrigerate for 30 minutes to set.
  3. To a sauté pan add the oil ,1/4 full over medium heat. Once the oil starts to ripple, carefully add 3 dumplings (don't overcrowd the pan). Fry for 2-3 minutes per side until golden brown. Drain on a paper towel and serve warm.
