When I first moved the U.S., I became close with someone who is still a very good friend to this day, her name is Melanie. What’s amazing is that we actually became and remained friends because we are just so opposite. Not only did we grow up on different sides of the world and with that comes with cultural differences and habits, our personalities could not be more different. I’m shy and consider myself to have a good (British) sense of humor, Melanie is very outgoing and tries to be funny (bless her heart), but it doesn’t quite happen. It’s OK, she’ll be reading this and she will agree. As far as our eating habits, complete polar opposites. I workout and eat clean everyday, she… well, does not let’s just say.
When I mentioned to Melanie that I was going to be making a smoothie, she wrinkled her nose at the thought of something good for you. I told her that if I can get her to like my smoothie, she has to buy me dinner. And that is how and why my smoothie was born.

You’re probably wondering what Melanie thought of the mango, carrot & ginger smoothie. Let’s just say, we have a dinner date this weekend and Melanie has a new healthy snack. I think it was the cuteness of my bunny straws that helped seal the deal.
- 1 cup fresh, or frozen mango chunks
- 1/2 cup carrots, sliced
- 1 tablespoon Greek yogurt
- 1 teaspoon freshly grated ginger
- 1/2 cup coconut water, more if it's too thick
- Add all the ingredients to a NutriBullet or blender and blend until smooth.
- Serve chilled.
