Living in Los Angeles, there is a heavy Mexican food influence and it is one of my favorite cuisines to make at home and eat out and it is important I have access to the best ingredient. I am fortunate to have a large Northgate Market near to where I live where I can buy my LA MORENA® products and all my recipe ingredients as well as LA MORENA® Whole Jalapeños (7oz & 28oz), the star of this recipe.
When I’m preparing Mexican food, and and a recipe calls for jalapeños, I always chop them up and add them to salsas, guacamole and marinades because I tend to be spice sensitive. Eating them in small amounts distributed helps to cut down on the spice level. These grilled bacon wrapped pickled jalapeños take me a little out of my ‘spice comfort zone’ by eating the jalapeño in its whole state and introduces me to a different spice level.
These delicious bites can be baked in the oven, but since it is summer, I took the cooking outside and grilled them. It’s all about keeping the heat outside. Now, grilling bacon comes with a warning. You will need to keep an eye on them as the fat on the bacon melts, it will cause flame flare-ups. Simply move the peppers away from the flames if you do get a flare-up.
I can assure you, these will become your new favorite summer light bites. Look how portable they are, I was just enjoying them by the pool yesterday.
Grilled bacon wrapped pickled jalapeños are the one of the easiest summer appetizers. Whole Jalapeños are filled with cream cheese and spices, wrapped in bacon then grilled to crispy perfection.
- 1- 28 ounce can LA MORENA® Whole Jalapeños
- 8 ounces cream cheese
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 30 slices of bacon
To soften the cream cheese, add the unwrapped cheese to a microwave bowl and microwave for 10 seconds. Stir and microwave for 15 more seconds if needed.
To the cream cheese add the cumin and chili powder, mix well.
Slice the jalapeños in half lengthwise. Remove the seeds and membranes then dry them.
Spoon the cream cheese into a ziptop bag and seal.Use scissors to cut a corner for piping.
Pipe the cream cheese into the jalapenos. Wrap each jalapeño half with 1 slice of bacon.
Grill for 6-8 minutes until the bacon is brown and crisp.
