If you can’t find whole pineapple or are uncomfortable cutting a whole pineapple, you can buy the already peeled and cut packaged pineapple. And if all else fails, canned pineapple will get the job done.

Ingredients
- 1 whole pineapple (3 pounds/1.3 kg) peel and cut into bite size pieces
- 1 whole jalapeño pepper, seeds removed, finely chopped
- ⅓ cup (40 grams) red onion, finely chopped
- ¾ cup (100 grams) fresh tomato, chopped (1 medium, cherry or grape tomatoes can also be used)
- ⅓ cup (4 grams/a good handful) fresh cilantro, chopped
- 1 tablespoon fresh lime juice
- ½ teaspoon salt, plus more if needed
Instructions
- Add the pineapple, jalapeño, onion, tomato and cilantro to a bowl, stir until evenly mixed. Add the lime juice and salt and stir until well combined. Taste and add more salt if needed.
